Some meat quality parameters of broiler chickens fed diets containing different additives

Poultry meat is relatively rich in polysaturated fatty acid and therefore, readily susceptible to oxidative deterioration. researchers nutritionist have sought for feed additive broilers birds that will be able absorb the additives dietary component directly their tissues thereby getting bioactive compounds this supplements through broiler into human food chain while avoiding resentment due its direct consumption. In study, quality storage stability of obtained from Cobb strain chickens fed diets containing different were investigated. A total 150 day old purchased brooded. After two weeks brooding, (control) (T1) , basal diet + 4 g/kg cloves (T2) turmeric (T3), 2.0 mg Selenium (T4) 0.25 mg/kg butylated hydroxytoluene (BHT) (T5), The feeding trial lasted a period six weeks. At end experiment, three each replicates selected slaughtered. Data collected on water absorptive power (WAP), holding capacity (WHC), refrigeration loss, pH, colour, cooking lipid profile, stability, bacterial count sensory evaluation. Results revealed supplemented chicken with either clove or had decreased loss 8.02 9.91, respectively as compared 28.04 control samples. There was cholesterol (59.25 62.45 against 69.10 samples) . It also observed all significant decrease pH (6.27, 6.31, 6.37, 6.35 cloves, turmeric, selenium BHT, 6.50 diets. addition BHT reduced (0.95 1.00 respectively). concluded powder improved chickens.
